An oral care method and composition are provided. The present invention relates to a method for reducing bacteria in a subject's mouth, wherein the mouth is contacted (eg, rinsed) with an effective amount of a composition comprising a soluble derivatized chitosan, whereby the subject is tested. A method is described that includes reducing bacteria in the mouth of the body. Described herein are oral care compositions comprising a soluble derivatized chitosan. Exemplary methods using the compositions described herein include a method of reducing bacteria in a subject's mouth, agglutinating bacteria, and the resulting aggregated bacteria from a subject ( For example, a method of removing (from the subject's mouth) and destroying the biofilm in the subject's mouth is included.
