abstract | PROBLEM TO BE SOLVED: To sterilize a food having a shell or a shell covering an edible portion, on the surface of the food, while suppressing the absorbed dose of X-rays of the edible portion to a reference value or less while irradiating the electron beam to the extent which . SOLUTION: In a state where TLD elements T and a polyethylene film PEF are disposed between agar CD corresponding to the edible portion of a simulated sample of raw eggs and eggshell 4 corresponding to the surface portion, eggshell 4 has 80kV to 150kV. The electron beam EB is irradiated at an accelerating voltage, the light emission amount is obtained, and the surface dose of the eggshell 4 is obtained by the RCD film dosimeter R. The X-ray dose corresponding to the obtained luminescence amount is determined from the calibration curve. The surface dose is A, the X-ray dose is B, the allowable value of the surface dose is C, and the adjusted internal dose is obtained from the formula (B / A) × C.
