An object of the present invention is to synthesize a single (R-form) betalein when using a betalein-extracted / purified product as a pharmaceutical product or analyzing its function. SOLUTION: A gene involved in betalain which is specifically synthesized in hypocotyl of quinua is isolated, and the functional analysis of the gene is carried out.
