abstract An object of the present invention is to efficiently produce isoflavanones such as dihydrodaidzein using lactic acid bacteria. The present invention has found a lactic acid bacterium capable of efficiently producing isoflavanones, for example, dihydrodaidzein. As a result, not only daidzein, which is a precursor of dihydrodaidzein, but also isoflavanones such as dihydrodaidzein can be efficiently produced not only when soy isoflavone or soy milk is used as a fermentation raw material.
