abstract An eggshell membrane hydrolyzate containing a high content of cysteine and a wide range of molecular weight from low molecular weight to high molecular weight is provided. SOLUTION: The content of cysteine is 5.0% or more and 15.0% or less, and in the molecular weight distribution, the ratio of molecular weight less than 3,000 is 80% or more and 95% or less, and the ratio of molecular weight 3,000 or less and less than 10,000 Eggshell membrane hydrolyzate wherein the ratio of molecular weight 10,000 or more is 0% or more and 5% or less. In the eggshell membrane hydrolyzate, the ratio of cysteine to 1 part of alanine may be 1.0 part or more and 10.0 parts or less.
