abstract | [Problem] To provide an oil-in-water emulsified fat for middle seeds that sufficiently suppresses the puncture phenomenon without impairing the flavor and texture of the oil-like food. SOLUTION: In the constituent fatty acids, edible fats and oils including transesterified fats and oils containing C20 or more saturated fatty acids in the range of 1 to 10% by weight, moisture 30 to 65% by weight, thickeners 1 to 7 are included. An oil-in-water emulsified fat for medium-sized seeds containing mass% and containing no emulsifier. A milk raw material having a phospholipid content of 2% by mass or more in a solid content derived from milk is contained in an amount of 0.9 to 6.0% by mass in solid content in 100% by mass of an oil-in-water emulsified fat for middle seeds, Oil-in-water emulsified oil for medium-sized seeds.
