abstract | [Problem] To provide a plasmalogen composition derived from chicken breast and a food composition for improving cognitive function comprising the composition. The present invention provides a chicken breast-specific composition ratio comprising a purified product of total lipids that has been extracted and fractionated from chicken breast and from which by-product protein fraction and water-soluble low molecular weight fraction have been removed. And a purified plasmalogen obtained by subjecting the edible complex lipid to enzyme treatment with phospholipase A1 (PLA1) to remove glycerophospholipids containing lyso form and extract and remove sphingomyelin. PLs) is a mixture of edible PLs and δ-tocopherol having a mass of 100 to 200 times its mass as a base material for improving cognitive function, specifically, for healthy subjects.
