abstract | [PROBLEMS] To reduce the time required for a carnivorous color to develop into a preferred color tone such as bright red due to the change of reduced myoglobin to oxymyoglobin, which is more effective than conventional processed foods of red fish meat containing raw myoglobin. Of processed foods that can be shortened quickly. A processed food of raw red fish meat containing myoglobin containing a phosphate and a salt of an organic carboxylic acid in the red fish meat. The processed food further contains a reducing agent, and the myoglobin is preferably reduced myoglobin. The organic carboxylic acid is preferably citric acid, lactic acid or acetic acid, and is preferably a monovalent organic carboxylic acid. It is also preferable that the salt of the organic carboxylic acid is a sodium salt, a potassium salt or a calcium salt.
