abstract |
An oil containing polyunsaturated fatty acid (PUFA) is provided with a PUFA-containing oil having improved oxidative stability, which does not cause rancidity due to oxidation during storage and does not cause unpleasant flavor and odor in the oil. (I) at least 30% by weight of one or more polyunsaturated fatty acids having at least 4 double bonds; (ii) at least one first antioxidant; and (iii) An oil comprising less than about 1000 ppm of lecithin. A PUFA-containing oil with enhanced oxidative stability comprising less than about 750 ppm of a second antioxidant selected from ascorbic acid derivatives. [Selection figure] None |
