A method for producing a processed ginger product and a processed ginger product in which the content of shogaol is increased while the content of gingerol is reduced. A ginger and a volatile acid aqueous solution are disposed separately, and a ginger processed product is produced, which includes a heating step in which the ginger is heated in a steam atmosphere generated by heating the volatile acid aqueous solution. Method. The aqueous solution of the volatile acid is preferably an acetic acid aqueous solution. As the aqueous solution of volatile acid, it is preferable to use an aqueous solution of volatile acid saturated with one or more inorganic salts selected from magnesium chloride, sodium chloride, calcium chloride, and potassium chloride.
