abstract | A method for stabilizing a p-coumaric acid glycoside of glucose and a method for producing a p-coumaric acid glycoside solution of glucose using the same are provided. The pH of a p-coumaric acid glycoside solution of glucose is 2.0 to 6.0, preferably 2.0 to 5.0, more preferably 2.0 to 4.3, particularly preferably 3. The method of stabilizing the p-coumaric acid glycoside of glucose contained in the p-coumaric acid glycoside solution of glucose by performing the step of adjusting to .6 to 4.2. A method of producing a stable p-coumaric acid glycoside solution of glucose by stabilizing the p-coumaric acid glycoside in the p-coumaric acid glycoside solution of glucose using the stabilization method. The stabilization method, wherein the p-coumaric acid glycoside is a glycoside at the 4-position or 6-position of glucose.
