titleOfInvention | Method for preparing acidic milk beverage and acidic milk beverage |
abstract | The present invention is a method for preparing an acidic milk beverage comprising: a) an aqueous milk protein composition comprising at least 1% by weight of casein and / or caseinate, at least 60% by weight of water, a pH in the range of 5.5-8. And b) deamidating the aqueous milk protein composition to deamidate casein and / or caseinate until a deamidation ratio of 50% or higher deamidated casein and / or caseinate is achieved. Adding the enzyme; and c) adjusting the pH of the composition to 4.8-5.4. It is preferred that the aqueous milk protein composition is incubated for a time such that the isoelectric point of the deamidated casein or caseinate formed is at least 0.5 smaller than the native or non-deamidated caseinate, respectively. The beverage thus obtained is also claimed. [Selection figure] None |
