abstract | The present invention relates to a method for producing yeast. The invention particularly relates to a method for producing biological yeast comprising the use of biological substrates that make it possible to supplement the nutrient requirements of the biologically derived substrates, in particular phosphorus. The method of the invention makes it possible to obtain biological yeasts and biological yeast extracts according to European Union Regulation (EC) 834/2007. According to the invention, a phosphorus-rich biological composition is obtained by hydrolysis and solubilization of at least one plant substrate derived from an organism containing 2 to 18 g of phosphorus per kg of product, from 60% of that phosphorus. 80% is in the form of phytic acid.
