A method of preparing a nutritionally enriched yeast comprising: a) culturing the yeast with at least one fermentable substrate under conditions suitable to achieve fermentation; b) Separating, c) combining the isolated yeast with at least one micronutrient selected from vitamins, minerals, amino acids and antioxidants to obtain a nutritionally enriched yeast, and d) nutritional Drying the fortified yeast. This method allows the yeast to retain high levels of micronutrients, and the nutritionally enriched yeast obtained by this method is a useful means for supplementing the diet with micronutrients. |
