abstract | PROBLEM TO BE SOLVED: To provide noodles with improved yield of dietary fiber after boiling and a method for producing the same. A non-reducing terminal glucose residue located at one end of a linear glucan having a glucose polymerization degree of 3 or more, wherein (A) glucose is a constituent sugar and (B) is linked via α-1,4 bonds. A branched structure having a glucose polymerization degree of 1 or more linked through bonds other than -1,4 bonds, and (C) isomaltose dextranase digestion, so that isomaltose is 25% by mass or more per solid content of the digested product. A branched α-glucan mixture produced in an amount of not more than mass% and having a water-soluble dietary fiber content of 40 mass% or more determined by (D) high performance liquid chromatography (enzyme-HPLC method) This problem is solved by providing noodles containing 2% by mass or more and less than 10% by mass, a method for producing the same, and a premix powder for producing noodles.
