abstract |
The present invention provides an AGEs formation inhibitor that makes it possible to limit the formation of AGEs caused by chemical saccharification of proteins. An AGE formation inhibitor containing quercetin as an active ingredient as component (A). Quercetin significantly suppresses AGE formation. When the AGEs formation inhibitor further contains sulforaphane as the component (B), the inhibitory action of AGEs formation is improved by the synergistic action of quercetin and sulforaphane.
