abstract | Disclosed is an edible oil / fat composition capable of suppressing color fading due to heating in a blended oil of roasted oil and non-roasted oil, a method for producing the same, and a method for producing a cooked product. SOLUTION: It contains 3 to 90 parts by weight of roasted oil that is roasted rapeseed oil and 10 to 97 parts by weight of non-roasted oil that is rapeseed oil, and contains a phospholipid having a phosphorus content of 4.5 to 20 ppm. An edible oil / fat composition for cooking and a method for producing the edible oil / fat composition.
