The present invention relates to a bioactive fraction (component) derived from fruit juice. The bioactive fraction of the present invention is either free or substantially free of patulin and protein. Furthermore, the bioactive fraction of the present invention has properties for antioxidant, free radical scavenging, moisturizing and buffering. The present invention also relates to a method for isolating a bioactive fraction derived from fruit juice and free or substantially free of protein and patulin. The present invention also relates to a method for preparing a biologically active fraction derived from fruit juice that is stabilized and either free or substantially free of patulin and protein. |
