abstract To provide a hydrogen production system and a hydrogen production method for appropriately stopping so as to suppress deterioration of a catalyst. A hydrogen production system includes a dehydrogenation reaction section having a catalyst that causes a dehydrogenation reaction of an organic hydride R, a heating section that heats the catalyst, and a catalyst temperature that detects the temperature of the catalyst. A detection unit 91, an organic hydride supply unit 20 that supplies the organic hydride R to the dehydrogenation reaction unit 10, hydrogen supply units 60 and 70 that supply hydrogen H to the dehydrogenation reaction unit 10, and a control unit 80 are provided. When the control unit 80 tries to stop the dehydrogenation reaction of the organic hydride R, the controller 80 stops the heating of the catalyst 12 while continuing the supply of the organic hydride R and hydrogen H to the dehydrogenation reaction unit 10, and detects the catalyst temperature. The heating unit 30, the organic hydride supply unit 20, and the hydrogen supply units 60 and 70 are stopped so that the supply of the organic hydride R to the dehydrogenation reaction unit 10 is stopped after the temperature detected by the unit 91 decreases to a predetermined temperature.
