An inkjet ink having sufficient fixability even when recorded on various foods, materials in contact with food, food packaging materials, and the like, and a printing method therefor are provided. The ink-jet ink of the present invention contains an edible dye, polyvinylpyrrolidone, water, and caprylic acid ester, and the content ratio of the caprylic acid ester is 1 to 15% by weight. In the printing method of the present invention, when the inkjet ink is ejected from a drop-on-demand inkjet apparatus, and the inkjet ink is attached to a printing target, the inkjet ink is ejected from the drop-on-demand inkjet apparatus.
