abstract | An object of the present invention is to provide a composition containing a sweet taste component of rahan fruit, which contains mogrosides generally known as sweet ingredients of rahan fruit, exhibits good sweetness, and has excellent functionality such as antioxidant properties. An extract of Rahan fruit is supplied to an immobilized enzyme membrane on which a proteolytic enzyme is immobilized, and the immobilized enzyme membrane is permeated while decomposing the protein in the extract, and the immobilization. The mogrosides and protein, which are prepared by adding sweeteners and other additive components to the permeate of the oxidase membrane, contain sweeteners, and the mogrosides content is less than 0.5-70% by weight A composition containing a sweet taste component of Rahan fruit, wherein the protein content is 15 parts by weight or less with respect to 150 parts by weight of mogrosides.
