The present invention discloses microcapsules that are stable in acidic aqueous systems. This microcapsule may be used to protect hydrophobic substances. This microcapsule may be used in acidic foods. The microcapsule includes at least one hydrophobic material and a layer around the at least one hydrophobic material. This layer contains the glycated protein. A method for manufacturing microcapsules is also disclosed herein. |
