abstract The present invention provides a production method for reducing the generation of odor and discoloration in plants and plants produced using plant-derived materials. A water-soluble component contained in a plant material is removed by performing a contact step of bringing a plant material selected from plants and plant-derived materials into contact with an aqueous solvent, and at least saccharides are contained among the water-soluble components. This is a method for producing a plant-based material that obtains a plant-based material that is less in amount than the plant material. The contacting step is preferably carried out by crushing the plant material in an aqueous solvent. [Selection figure] None
