Disclosed is a saccharification reaction inhibitor which inhibits an excellent saccharification reaction inhibitory action, in particular, a reaction between an intermediate in a saccharification reaction and an amino acid, peptide, protein or salt thereof. The present invention relates to a group consisting of Japanese cypress, chestnut, peanut, oyster, rosehip, blueberry, pomegranate, rosemary, grape, apricot, perilla, sage, peppermint, savory, yerba mate, coffee, olive, and tea tree.
