abstract Disclosed is a powdered emulsified fat blended in a heat sterilized beverage, particularly a heat sterilized beverage that has been subjected to retort sterilization or UHT sterilization, even when the powdered emulsified fat is blended in a heat sterilized beverage. To provide a powdered emulsified oil and fat in which the redispersibility of an aggregate obtained by separating and agglomerating milk components or oils generated by storage for a long period of time is improved. A powdered emulsified fat for heat-sterilized beverages obtained by drying an oil-in-water emulsion obtained by emulsifying a solution containing fat and sorbitan fatty acid ester.
