abstract | Disclosed is a method for dyeing ham prepared by an injection method with good coloration and uniform color tone when colored with a red carotenoid pigment in a crystalline state such as lycopene or canthaxanthin. SOLUTION: When preparing processed meat products such as ham, a red carotenoid pigment in a crystalline state such as lycopene or canthaxanthin in an injection method in which a liquid substance such as pickle liquid or seasoning liquid is uniformly dispersed inside the meat. Then, the ham is colored by this method using a pickle solution containing a water-soluble polysaccharide (gati gum, gum arabic). When the red carotenoid pigment is diluted and dissolved in methanol, the maximum wavelength in the wavelength range of 400 to 550 nm is 460 nm or more. [Selection figure] None |
