abstract In the method of the present invention, asparaginase is added to sugarcane juice when the efficiency and effectiveness of the added asparaginase is maximized during the molasses production process or the refined sugar process. The added asparaginase reduces the production of acrylamide in the molasses and sugar to the desired level, while having a minimal effect on the quality and properties of the final product.
