The present invention includes oleosins (as currently defined, including caleosin, steroleosin and polyoleosin), surfactants such as phospholipids and polyunsaturated fatty acids having four or more double bonds. The present invention relates to an artificial oil body including an oil containing fatty acid. The present invention also relates to a method for preparing the artificial oil body. These AOBs can further contain other molecules such as bioactive molecules used in various types of products, especially for producing oxidatively stable oil-in-water emulsions without the addition of antioxidants.
