abstract PROBLEM TO BE SOLVED: To produce a fish bone paste and food using the same, and to solve the problem, fish bone (including fish meat) can be softened and eaten when subjected to high-temperature and high-pressure treatment. This softened fish bone can be crushed and used as a food material by masking the fishy odor. “Hamburger or cream croquette” or the like produced from these fish bone food materials can be added with calcium, collagen, EPA, or DHA as compared with products not containing fish bone. At the same time, it is possible to eliminate waste.
