abstract The present invention provides a method for stabilizing chlorogenic acids in which the residual ratio of chlorogenic acids is high and hue change can be suppressed. SOLUTION: Ethanol is added to and mixed with an aqueous solution containing chlorogenic acids to stabilize chlorogenic acids known to have physiological activities such as antioxidant activity and blood pressure lowering activity, so that the content of chlorogenic acids is not reduced. In addition, the beverage should be in a form that can be easily consumed. [Selection figure] None
