titleOfInvention Branched-chain amino acid degradation odor inhibitor and degradation odor control method
abstract An object of the present invention is to provide a product having a palatability by effectively suppressing a deteriorated odor generated with the passage of time when a product having an anti-fatigue action is produced by incorporating an amino acid such as a branched chain amino acid as an anti-fatigue material. SOLUTION: A branched-chain amino acid degradation odor inhibitor containing imidazole dipeptide as an active ingredient, food and drink containing the same, and further containing imidazole dipeptide in an amount of 0.005 to 0.55 times based on the weight of the branched-chain amino acid. A method for suppressing deterioration odor of branched chain amino acids, characterized by comprising: [Selection figure] None
