abstract | To provide flower pastes such as flower paste and custard, which have good spreadability and extensibility, and good refrigeration resistance and freezing resistance. A flour paste containing starch derived from waxy starch and galactomannan, and containing 5 to 45% by mass of fats and oils. It is preferable that the starch derived from waxy starch is a gelatinized swelling-inhibiting starch. In order to produce the flour pastes, it is preferable to heat and cool the flour paste raw material containing edible fats and oils, starch derived from waxy starch and galactomannan, after homogenization.
