[Solution] Using a succinic acid derivative in which a hydrocarbon chain is bonded to the carbon at the 2-position of succinic acid or a water-soluble soybean polysaccharide esterified with succinic acid, protein particles are dispersed and stabilized at around pH 5 to prepare an acidic protein food be able to.
