abstract [Solution] The present invention provides that a carbohydrate source is contacted with a microorganism in an aqueous fermentation broth under fermentation conditions to form a fermentation product that is a salt or a product having a boiling point higher than that of water, The fermentation process is performed at the fermentation temperature at a pressure below the atmospheric pressure and above the value at which the reaction medium is at its boiling point, and water is at least 20% of the volume of liquid present in the reactor at the start of the fermentation. It relates to a fermentation process that is evaporated in the fermentation and removed from the reactor in an amount. It has been found that an effective decompression fermentation process and on the other hand a large amount of water removal has many advantages. This will solve the problems with excess water in the system, ensure the removal of heat of reaction and lead to improved fermentation quality. [Selection figure] None
