abstract A method for screening a lactic acid strain having diacetyl-producing ability by PCR simply and in a short time, and a strain obtained thereby. In a pathway for producing diacetyl, a diacetyl-producing strain is screened conveniently and efficiently by PCR targeting an enzyme gene responsible for uptake of citrate into the microbial cell. By obtaining a lactic acid strain selected by this method and using the lactic acid strain, a food or drink having an unprecedented strong fermentation flavor is produced. [Selection figure] None
