abstract |
A stable form of sucralose is provided. More specifically, it is stable and significantly reduced sweetness and coloring (browning / blackening) even by heating under high temperature conditions, particularly under low water content and / or under low pH conditions. It provides sucralose. A sucralose-containing composition which can be achieved by allowing at least one organic acid selected from the group consisting of succinic acid, acetic acid and fumaric acid and / or a salt thereof to coexist with sucralose.
