Food products containing long chain polyunsaturated fatty acids and methods for preparing them. The edible oil composition is a blend of a first oil containing LC PUFA and a second oil substantially free of LC PUFA. The first oil preferably comprises omega-3 LC PUFA, omega-6 LC PUFA, or mixtures thereof. Methods for food preparation include cooking on oil on skillet, methods for fried cooking in oil, methods for preparing food sauces containing edible lipids, and for preparing extruded food products And a method for enhancing the LC PUFA content of a food product, particularly a previously cooked food product. Also provided are food products prepared according to such methods. Such compositions and methods are useful, for example, to increase the intake of LC PUFA. [Selection] Figure 1 |
