abstract | The present invention provides a method for easily and quickly obtaining the concentration of a fatty acid ester, which is an important aroma component of a yeast fermented product produced using yeast. The concentration of free fatty acid contained in a control sample yeast fermented product that is the same as or the same quality as the yeast fermented product to be measured is measured by an enzyme method, and the concentration of fatty acid ester contained in the control sample yeast fermented product is measured. Regression analysis of both, and by determining the correspondence between the fatty acid ester concentration and the free fatty acid concentration in advance for the control sample yeast fermented product, the concentration of the free fatty acid contained in the target yeast fermented product can be determined by enzymatic method.
