abstract The present invention provides an ethanol production method capable of efficiently producing ethanol while suppressing the growth and activity of various bacteria. The present invention provides a method for producing ethanol, including a step of culturing a microorganism capable of ethanol fermentation in the presence of ethanol at a concentration capable of suppressing the activity of various germs, and suppressing the activity of the various germs. The resulting concentration of ethanol is present from the beginning of the culture. In one embodiment, the method further comprises the step of recovering ethanol continuously or intermittently.
