Method for facilitating peeling of citrus skin and endothelium |
abstract |
The present invention provides a method for simultaneously facilitating the peeling and peeling of raw citrus fruits by combining physical treatment and treatment with three kinds of mixed enzymes. SOLUTION: A physical treatment is performed by drilling raw citrus fruits, and an enzyme solution in which three kinds of cellulase enzymes, pectinase enzymes and hemicellulase enzymes are mixed is immersed in the processed fruit body under reduced pressure. And reacting to facilitate peeling of the outer skin and endothelium simultaneously. [Selection figure] None |
