The present invention relates to α-amylase (AmyE) derived from Bacillus subtilis and variants thereof, nucleic acids encoding them, and host cells containing the nucleic acids. Methods are provided for using AmyE or variants thereof for starch liquefaction and / or saccharification. By this method, sugars useful for ethanol and high fructose corn syrup can be produced.
