abstract | [PROBLEMS] A problem to be solved is that it has sufficient antibacterial and antiseptic power against bacteria and fungi that cause food spoilage, is safe for the human body, and is stable and inexpensive as a composition. It is to provide a new food preservative that can be produced. SOLUTION: (A) 15 to 45% by weight of a fatty acid having 8 to 22 carbon atoms or a salt thereof, and (B) 20 to 50 mono, di or tri fatty acid glycerin ester composed of a fatty acid having 8 to 18 carbon atoms and glycerin. % By weight, (C) 10-30% by weight of sulfosuccinic acid ester, (D) one or more alcohols selected from ethanol, propanol or isopropanol, 0-10% by weight, and (E) water by 0-55%. It is found that a composition obtained by mixing an aqueous base at a ratio of 1 to 500 parts by weight with respect to 1 part by weight of a solution containing at least 1% by weight has excellent antibacterial and antiseptic power, and is a food preservative according to the present invention.
