abstract | Provided is a method for effectively neutralizing a sour organic acid-containing material such as ume vinegar without causing modification of useful components such as polyphenols and amino acids in the content. When neutralizing a strongly acidic organic acid-containing material with a strong alkali, a mixed solution of a strong alkali and, for example, a sugar alcohol usually used as a food additive or food, is used.
