abstract 【Task】 In the manufacture of ripened fruit syrup, it can be easily and inexpensively preserved syrup with high preservation of the original texture and flavor of the fruit by preventing tissue softening, disappearance of scent components, and browning. The object is to propose a manufacturing method that can be used. [Solution] A method for producing ripe fruit and syrup liquid in a container that can be sealed to produce a syrup pickled fruit, and boiling boiled syrup liquid obtained by boiling the syrup liquid and ripe fruit with skin are charged into a sealable container. The container is sealed and the container is allowed to stand at room temperature, and the ripe fruit with skin is sterilized by the residual heat of the syrup liquid, and then the whole fruit is cooled and the ripe fruit and syrup liquid are used to prevent spoilage and alteration. The above-mentioned problems are solved by a method for producing a ripened fruit with a syrup that is refrigerated with a container. [Selection] Figure 1
