The present invention provides a method for using a proline-specific endoprotease to produce a food lacking a celiac disease-related epitope. Wheat or barley gluten containing a celiac disease-related epitope is hydrolyzed with a proline-specific endoprotease, an enzyme of Aspergillus, and the resulting peptides are produced in beer and bread for celiac disease patients.
