abstract | An object of the present invention is to provide a novel protein intake form that has not been found in the past. In view of the situation where conventional protein intake is mainly derived from “side dishes”, it was an object to provide a protein material applicable to things such as “dessert” that can be consumed more easily. [MEANS FOR SOLVING PROBLEMS] It has been found that an edible globular protein material can be easily obtained by applying a polyion complex, focusing on a globular protein material.
