Saturated and unsaturated fatty acids or a mixture of saturated and unsaturated fatty acid alkyl esters is divided into a first fraction enriched with saturated fatty acids or saturated fatty acid alkyl esters and a first fraction enriched with unsaturated fatty acids or unsaturated fatty acid alkyl esters. This is a method for separating into two fractions. When separating fatty acids, the method includes (a) saponifying a mixture of long chain saturated and unsaturated fatty acids to produce free fatty acids, (b) complexing the free fatty acids with urea, (c ) Separating the free fatty acid complexed with urea into a first fraction enriched with saturated free fatty acids and a second fraction enriched with unsaturated free fatty acids. When the fatty acid alkyl ester is separated, the present method comprises: (i) complexing the fatty acid alkyl ester with urea, and (ii) enriching the saturated fatty acid alkyl ester with the fatty acid alkyl ester complexed with urea.
