abstract |
An object of the present invention is to provide a novel method capable of preparing a crystallization mother liquor of 1-kestose easily and inexpensively without performing pseudo moving bed type chromatographic separation, which is costly in production. A method for preparing a 1-kestose crystallization mother liquor according to the present invention comprises (1) contacting β-fructofuranosidase with sucrose in an enzyme solution containing β-fructofuranosidase and glucose oxidase, 1-kestose is produced; (2) glucose produced as a by-product in the reaction of the step (1) is converted into gluconic acid by glucose oxidase in the solution; (3) the resulting gluconic acid is removed from the solution.
