abstract PROBLEM TO BE SOLVED: To provide a sushi food for swallowing food that can enjoy an appearance and taste almost the same as a conventional food while being a swallowing food, and a manufacturing method thereof. Another object of the present invention is to provide a sushi food that is inexpensive and safe in terms of hygiene management and a method for producing the sushi food by reducing the manufacturing process of the sushi food. A swallow food sushi food according to the present invention is a swallow in a packaging container comprising a layer of food that exists in contact with the inner surface of a concave container and vinegared rice that is in contact with the food material layer. In the edible sushi food, the food material layer is composed of a food material to which a thickening polysaccharide is added, and is arranged to cover a part or all of the vinegared rice.
