PROBLEM TO BE SOLVED: To provide a coffee extract containing γ-aminobutyric acid at a high concentration and further containing a functional component derived from coffee. Γ-aminobutyric acid-containing coffee bean extract of the present invention Is obtained by extracting a seed of the genus Rubiaceae with a polar solvent to obtain an extract, and fermenting the extract as a medium to produce γ-aminobutyric acid. Preferably, the extract contains 5 to 90 wt% of γ-aminobutyric acid. Furthermore, it is preferable to further contain caffeoylquinic acids and to contain chlorogenic acid as caffeoylquinic acids. Furthermore, it is preferable to further contain caffeine. Moreover, the said extract can be used for a coffee drink, food-drinks cosmetics, etc. [Selection figure] None |
